INGREDIENTS

  • Ferment:
  • 1 cup whole wheat flour
  • 1 cup water (not cold or hot)
  • 2 tbsp honey
  • 10 g / 0.35 oz instant yeast
  • Dough:
  • 2 cups whole wheat flour
  • 2 tsp Salt
  • 3 tbsp olive oil (or any other)
  • 1 cup water (not cold or hot)
  • Optional: Chia seeds, sesame, sunflower, flax, pumpkin, etc.

INSTRUCTIONS

  1. In a bowl place the ingredients to make the ferment: the cup of whole wheat flour, the cup of warm water, the honey and the dry yeast. Mix, cover and let it ferment for 1 hour approx.
  2. In a bowl or on the crown-shaped table place the whole wheat flour cups, salt, the ferment, olive oil and water. If wanted, can also place seeds. Mix and then knead until well combined. Stretch the dough in a rectangular shape, roll up from the outside to the inside tightly and place in a mold sprayed with vegetable oil or sunflower oil. Cover and let rise for about 40 minutes.
  3. Brush the dough with egg or moisten with water to sprinkle with seeds (optional).
  4. Bake in a preheated oven at 180° for 40 minutes.
