Shrimp are a class of fresh and saltwater crustaceans. Since it is a versatile ingredient, its preparation is wide and the custom or style of food that has it as an ingredient may differ according to a specific country. Currently, shrimp can be obtained raw or frozen, also in a clean and precooked version.
Let’s talk about the recipe:
I present two similar ways of preparation but with a very different taste. The first is a provencal shrimp side dish and the second is shrimp in soy sauce and sesame seeds side dish. Either way, they turn out to be a simple, easy, and exquisite side dish. However, before you start there are some details to be kept in mind regarding shrimp.
About the shrimp:
Before using raw shrimp, they must be properly peeled and cleaned. To do this, the head and shell are removed, then an upper cut is made along the length and washed under the jet of cold water from the tap. In this way, the intestines are removed (black strip). These, if not removed, give an unpleasant taste to the preparation.
Removing the shell from the shrimp is optional, but is generally separated by its toughness. In addition, in this way, it facilitates a more comfortable consumption, since otherwise it must be done on the plate with the hands. It is also separated to make cleaning easier, easily removing any impurities that they may have.
About Cooking:
Shrimp cooking is fast, depending on its size it can take between 5-10 minutes. To avoid losing flavor and texture, overcooking is not recommended. They are usually cooked in plenty of boiling salted water, although they can also be grilled, broiled, in a pan or in the microwave. This time the cleaned shrimp are sautéed in the pan.
When buying frozen shrimp you have to take into account if they are clean or cooked because their cooking will also depend on it. If the frozen shrimp are whole, they are thawed and then cleaned before cooking. If they are precooked, they are boiled for 10 minutes so they reabsorb their juice, soften and are ready to be used.
One of the ways to know if the shrimp are cooked is to observe their color. So when they take on a pinkish appearance, their texture is firm and the rolling does not exert resistance, they will be ready. If they remain white, gray, fall apart or remain dry, the cooking time was too long.
