Pancakes or also called crepes are a very popular dessert or food, a classic in Argentina. They can be eaten filled with milk caramel, with fruits, cream, the sweet of your choice, cheese, pastry cream, etc.

This time a basic pancake dough will be prepared. Which means that it will allow you to decide how to use them later. But I also leave some ideas in case you have already decided and want to give them a special flavor. The pancake batter really does not have much difficulty, the only thing you have to keep in mind is not to form lumps during preparation. And have some patience above all things because the cooking is done one by one using a non-stick frying pan.

You can prepare a good quantity and freeze. They last about 3 months.

INGREDIENTS

  • All purpose flour 250 g / 8.82 oz / 2 cup
  • Milk 500 ml / 2 ½ cup
  • Eggs 4
  • Butter 50 g / 1.76 oz / 1 ¼ tbsp
  • Pinch of salt
  • Optional: nutmeg, vanilla essence, lemon zest, orange zest, apple or pear zest, chard or processed spinach, etc.

INSTRUCTIONS

  1. Place the eggs, milk and a pinch of salt in a bowl (if you want to perfume with essence or lemon or orange zest, add). Beat until joined.
  2. Add half of the flour and beat with a hand mixer or electric mixer until it forms a smooth dough without lumps. Add the remaining half of the flour and beat again for a few more minutes.
  3. Cover with a film and leave to rest in the refrigerator for about 2 hours. So the protein found in the flour is hydrated. Also can be cook without resting. If the dough is prepared the day before, it will taste even better.
  4. Before starting to cook these wonderful pancakes, add the melted butter to the batter, stir. It is also the time to add the extra ingredients (apple, pears, etc).
  5. Cook in a nonstick skillet pancake pan with a little butter or oil (I use shortening spray). Place a little of the preparation with a ladle, cook over low heat until the dough coagulates, peel off the edges and turn to cook the other side.
  6. For stuffed pancakes without further cooking (like cannelloni), you can cook until lightly browned. If you are going to fill them and take them to the oven for example, it is convenient to cook them leaving them white (these are called crepes) since the edges will be too hard when they have an extra cooking.
