How to Make Homemade Ricotta. Very Easy Recipe!


Ricotta is used in countless sweet and savory recipes. With it desserts and all kinds of elaborate meals are prepared. Along with other ingredients, they are fillings of great flavor. Being a product widely used in the kitchen for its large number of recipes that can be prepared with it.

At home it is prepared a lot because comparing the prices and the great advantage of doing it naturally without preservatives or additives, there is obviously a big difference. With only very few ingredients and in a little while you are going to prepare this recipe that you never imagined how easy it was to prepare it at home!

With a liter of milk, approximately 200-300 grams of ricotta are made depending on the type of milk to be used, the method to make it and the type of consistency that is sought as a result (more or less liquid). So it is convenient to make 2 or 3 liters of milk if you use ricotta a lot in your meals.

I know that the small amount of the result is discouraging but the flavor in my opinion is unmatched. In addition, it does not contain any type of preservative and additive. We can make the amount we need or if we do not get just that day at the supermarket, it is good to always schedule this recipe.

To make this homemade ricotta we have two ways of making it, either we do it in the traditional way or we use a yogurt maker. At home we try to make things as natural as possible so it was worth buying one since we use it a lot. But I’m going to put the two ways to do it in case you have one too.

Los ingredientes que utilizamos para hacer esta receta son leche (entera creo que funciona mejor) y jugo de limón (se usa el el jugo de medio limon por litro de leche aproximadamente). Además, necesitaremos un lienzo para hacer de filtro y poder separar la ricotta del suero (yo me compre un recipiente que viene con un soporte en la cual se coloca el filtro de tela).

If you are going to use a yogurt maker, it is always good to read the instructions for it. If it came with a cookbook, follow its directions according to the brand of it. To make the ricotta in the yogurt maker I have, I’m going to put the way to make the ricotta that came with the instructions when I bought it.

Cualquiera de las dos maneras de hacer la ricotta funciona por igual. Si me preguntan cual es la diferencia entre una y otra debo pensar que es un poco la cantidad obtenida y quizás un poco la de textura.

Homemade Ricotta

  • Milk 2 l / 10 cups
  • Lemon Juice c / n


To make the ricotta in a yogurt maker:
  1. Boil the milk. As soon as it is removed, add enough lemon juice to cut the milk as can be seen in the picture.
  2. Let it cool until it reaches a temperature of 45 °. Place the preparation in the container of the yogurt maker. Cover and light. Leave for 6 hours.
  3. Then with a canvas or fine-woven cloth bag, filter to separate the ricotta from the serum (it is what looks yellow). Leave until it reaches the desired consistency (squeeze the filter bag to speed up the process if you want. If not leave it and be patient). Save the serum in case the ricotta is too dry and add a little of that serum if necessary.
  4. Separate the ricotta from the filter, place in an airtight container and season to taste. Store in the refrigerator. Homemade Ricotta
To make ricotta without a yogurt maker:
  1. Heat the milk until it is about to boil. As soon as it is removed, add enough lemon juice to cut the milk as can be seen in the picture.
  2. Once the milk is warm you have 2 ways to proceed. The first is to take the preparation to a container with a lid, wrap with a blanket and leave for 6 hours in a warm place (the same as when preparing homemade yogurt) or directly place the preparation on the filter or canvas and leave until it has the desired consistency. If this process takes a long time, you can put it in the refrigerator during this process.
  3. Separate the ricotta from the filter. Store in the refrigerator in an airtight container.
