Chocolate Cupcakes

INGREDIENTS

  • Butter at room temperature 240 g / 8.47 oz / 1 ¼ cup
  • Sugar 240 g / 8.47 oz / 2 cups
  • Vanilla essence 2 tbsp
  • Eggs 4
  • All porpose flour 300 g / 10.58 oz / 2 ½ cup
  • Bitter cocoa 50 g / 1.76 oz / 3 ¼ tbsp
  • Baking powder 10 g / 0.35 oz / 1 tbsp
  • Baking soda 1 tsp
  • Lemon juice 2 tbsp
  • Chocolate chips 100 g / 3.53 oz

INSTRUCTIONS

  1. Beat the sugar together with the sugar until it forms a clear and uniform cream.
  2. Add the bitter cocoa and vanilla essence. Mix
  3. Whisk continuously adding eggs one by one. 
  4. Add flour, baking powder, baking soda (previously sifted) and lemon juice. Beat until uniform.
  5. Incorporate the chocolate chips. Mix.
  6. Place in paper liner (fill 3/4) or in a muffin pan. Bake at 356 °F for 15-20 minutes.
  7. Once cold, you can accompany them with a little glaze if you wish.

NOTES

If you don't have a muffin pan and you don't want the cupcakes to deform during cooking, you can use double pyrotine.
