The preparation of this loaf cake consists of two parts and two doughs are made, one using ripe bananas and the other with chocolate. Which when put together in a non-homogeneous way, a whole wheat marbled style loaf cake is obtained. This means that visually the two parts of its elaboration are distinguished and differentiated.

The chocolate used is bitter to melt. Because it is needed to mix and integrate in the preparation in a smooth and uniform manner. Also, I used a bit of bitter cocoa to enhance its flavor and color. Although its use is totally optional, at the discretion of each one. It can also be made with just bitter cocoa, but it won’t be as tasty.

About Cooking:

To bake this whole wheat loaf cake you can use two small molds or a large one, always previously buttered and floured. The way to pour the preparation can be done in two ways; the first is to place a whole dough and then add the other on top (optionally you can mix a little with a toothpick). The second is to intersperse a little of the two preparations until it is complete.

Its cooking requires little time and like any whole grain recipe, if it is punctual, much better. In this way a moist and not dry loaf cake is obtained as a result. INGREDIENTS

  • BANANA DOUGH:
  • Whole wheat flour 250 g / 8.82 oz / 2 cups
  • Whole cane sugar 100 g / 3.53 oz / ½ cup / 5 tbsp
  • Baking powder 8 g / 0.28 oz / 2 tsp
  • Sunflower oil 80 ml / ½ cup / 5 ½ tbsp
  • Milk 75 ml / ¼ cup / 5 tbsp
  • Vanilla / Cinnamon1 tsp
  • Banana 2
  • Eggs 2
  • CHOCOLATE DOUGH:
  • Whole wheat flour 200 g / 7.05 oz / 1 ½ cup
  • Whole cane sugar 100 g / 3.53 oz / ½ cup / 5 tbsp
  • Baking powder 8 g / 0.28 oz / 2 tsp
  • Sunflower oil 80 ml / ½ cup / 5 ½ tbsp
  • Chocolate 100 g / 3.53 oz
  • Milk 180 ml / 1 ¾ cup / 12 tbsp
  • Bitter cocoa 1-2 tbsp
  • Vanilla essence 1 tsp
  • Eggs 2

INSTRUCTIONS

Banana Dough:

  1. In a bowl place the banana puree, the whole cane sugar and the vanilla essence. Mix
  2. Add the eggs. Beat.
  3. Add the sunflower oil and milk. Mix.
  4. Add the whole wheat flour with the baking powder. Mix without beating.
  5. Pour the preparation into a previously greased and floured mold. Hit the mold a little against the table so the dough settles and part of the bubbles that have been created are eliminated.

Chocolate Dough:

  1. In a bowl place the eggs and milk. Beat.
  2. Add the melted chocolate without stopping to beat. Incorporate the whole cane sugar. Perfume with vanilla or cinnamon.
  3. Add the sunflower oil. Mix.
  4. Add the whole wheat flour together with the baking powder and the bitter cocoa. Mix without beating.
  5. Pour the preparation over the banana dough. Hit the mold a little against the table so the mixtures settle and a large part of the bubbles that have been created are eliminated.
  6. Bake in a preheated oven at 160-180 °C / 71.11 - 82.22 °F for approximately 40 minutes or when inserting a toothpick it comes out dry. Let cool and unmold.

NOTES

  • White sugar can be used.
  • Can be used butter, margarine or any other type of cooking oil.
  • Milk can be replaced by water or vegetable milk.
  • Preheat the oven to the indicated temperature 15-20 minutes before baking.
  • Consume preferably before 3 days.
  • Can be frozen (3 months).
  • Whole wheat flours depending on their brand can absorb more or less amount of liquid. Be sure to incorporate liquids gradually.
