About the ingredients:
At Integralisimo, the whole wheat flour used is 100% whole grain, fine ground (I don’t use mixes unless I mention it). In general, depending on its brand, it can absorb more or less amount of liquid. So I recommend incorporating them gradually. Keep in mind that the lower the volume is, smaller final product you will get.
When making this recipe, ripe bananas are used to take advantage of that natural sweetness produced by maturity and thus use less sweetener. However, these cookies can still be made even though they are not. For this reason, according to preference, a little more sugar or sweetener should be added to compensate for that lack.
This is a recipe in which you can use milk, non-dairy milk or just water. Similarly, you have the option of using a mixture of them, that is, half and half. Although, using just water will make this whole wheat dough a bit more rustic. On the contrary, if you use animal or vegetable milk, it gives a certain softness to the dough.
The fat used in this opportunity is sunflower oil. But it can be replaced with margarine, butter, coconut oil, etc. As a result, depending on what fat is used, its texture can change. Therefore, always take into account the type of ingredient that is used to make a recipe on time.
About the dough:

- Whole wheat flour 350 g / 12.24 oz / 3 cups
- Baking powder 10 g / 0.35 oz / 2 tsp
- Coconut oil 30 ml / 2 tbsp
- Non-dairy milk 100 ml / 3.38 oz / 6 ½ tbsp
- Banana M 2
- Stevia liquid 1 tbsp
- Chocolate Chips 50 g / 1.76 oz / ½ cup
- Optional: vanilla essence, cinnamon.
- In a bowl, purée the bananas. Add the melted coconut oil, non-dairy milk, and stevia. Stir.
- Add the whole wheat flour in batches with the baking powder. Mix until you get a slightly sticky dough.
- Place the dough in plastic kitchen wrap. Store in the refrigerator for an hour.
- To form the cookies, divide the dough into equal parts, make little balls of dough, crush and mold with the hands. Place the cookies on a baking sheet previously oiled or sprayed with vegetable spray.
- Bake in a preheated oven at 160-180 °C / 320 - 356 °F for 10-15 minutes. Let cool on a rack.
